Tuesday Recipe: Spinach Bacon Quesadillas

Amanda has a great recipe today for Spinach Bacon Quesadillas.  Made with crisp bacon, fresh spinach and a mix of cheddar and cream cheese, these are sure to be a hit with your family!  They only take a short time to make and can be served as an appetizer, a snack, or a main course.  You can lighten the recipe up by using lower fat cheese and low sodium bacon and can also use corn tortillas to make these gluten free.  You can check out Amanda’s recipe on her post HERE.

  1. Hahaha! I think Kerry meant “crisp bacon, fresh -spinach-, and a mix of cheddar and cream cheese”, but I’m all for double bacon quesadillas!
