Recipe: Bacon, Spinach and Mushroom Quiche

quicheOne of the great things about quiche is that it truly can be served for breakfast, lunch or dinner! Plus, you can swap out ingredients based on what you have leftover or on hand. Using different cheeses can also change up the flavor quite a bit too. It all starts with a pie crust, and if things are hectic and you are pressed for time pre-made pie crust works just fine.

Michelle’s recipe calls for a delicious combo of bacon, spinach and mushroom for the filling, but you can substitute with what ever you like  – ham, sausage, bell pepper etc. The whole dish takes about 15 minutes of prep time and then just pop it in the oven and let it bake. Tuesday Recipe: Spinach Bacon Quesadillas

Amanda has a great recipe today for Spinach Bacon Quesadillas.  Made with crisp bacon, fresh spinach and a mix of cheddar and cream cheese, these are sure to be a hit with your family!  They only take a short time to make and can be served as an appetizer, a snack, or a main course.  You can lighten the recipe up by using lower fat cheese and low sodium bacon and can also use corn tortillas to make these gluten free.  You can check out Amanda’s recipe on her post HERE.
