Potato Salad makes a great side dish for anytime of the year, but especially during the summer for potlucks, BBQs and get togethers. Ashley has a variation that combines traditional potato salad with all the flavors of a loaded baked potato. The recipe is very easy to make, and best when allowed to sit in the fridge overnight giving time for all the flavors of the dressing to meld with the potatoes.
