Summer Corn Salad is easy to make, and the perfect side dish just about anytime of year. Of course it’s best with fresh corn, but this salad is also delicious by substituting frozen corn! Bright cherry tomatoes and fresh cilantro add beautiful color, while fresh lime juice adds just the right amount of citrus flavor.
