Her version is made colorful from the addition of bright red cherry tomatoes and vibrant fresh baby spinach. Lemon juice gives just the right amount of fresh citrus flavor, and a Greek yogurt dressing packs lots of flavor. There’s just a few more ingredients in the salad, and it’s best served after chilling in the fridge for a few hours.
